  • Medium saucepan

Ingredients
  

  • 1 cup of skimmed milk
  • ½ cup of undenatured whey protein powder Recommended: micellar casein
  • ¼ teaspoon of salt
  • 3 tablespoons of cocoa butter melted
  • 5 large egg whites
  • 6 ounces heavy cream ~180 ml -1 teaspoon of vanilla extract
  • Chocolate shavings to garnish optional

Instructions
 

  • In a medium saucepan, heat the milk until it begins to simmer. Remove from heat and add the whey protein powder and salt. Stir vigorously until the ingredients are thoroughly blended together. Pour the mixture into a large bowl and let cool for approximately 10 minutes so the proteins can bind together correctly.
  • Add melted cocoa butter, egg whites, and heavy cream to the cooled milk mixture; stir well to combine all ingredients. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  • Add vanilla extract during the last 5 minutes of churning time (optional). Serve with chocolate shavings, if desired. Enjoy!
