Ingredients
  

  • 1 lb. chicken breast
  • 2 carrots peeled and chopped into bite-sized pieces
  • 1 stalk celery chopped into bite-sized pieces
  • 1 potato peeled and diced into small cubes
  • ½ onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth or vegetable broth
  • Salt and pepper to taste
  • 6 oz. can tomato sauce or 1 cup of your favorite homemade tomato soup
  • 1 tbsp. sugar or honey for sweetness Optional

Instructions
 

  • Set your oven’s temperature to 350 degrees Fahrenheit.
  • Bring the chicken broth to a boil over high heat in a large pot. Add the diced potatoes and carrots, onion, garlic, tomato sauce, salt and pepper to taste, and sugar/honey if desired. Bring the soup back to a boil before carefully transferring it into an oven-safe casserole dish or baking dish sprayed with cooking spray.
