  • 1 cup chopped red onion
  • 1 cups diced fresh pineapple
  • ¾ cups diced red bell pepper
  • 2 tablespoons olive oil divided
  • 2 teaspoons balsamic vinegar
  • Sea salt and freshly ground black pepper to taste
  • 8 ounces crumbled feta cheese about 2 cups or goat cheese (about 1 1/2 cups)
  • Mixed baby greens such as butter lettuce oak leaf lettuce, spinach leaves, arugula leaves etc.
