Equipment Needed:
- 1 microwave-safe mug
- 1 spoon
- 1 measuring cup
- 1 whisk
Ingredients:
- 1 egg
- 1 scoop of protein powder (25-30g)
- 1/3 cup milk (or any other liquid that is not too thick) – I used almond milk and added a little water to make the consistency more like a cake batter. If you are using regular milk, use less liquid.
- About 1 tablespoon of peanut butter– I used one tablespoon because I wanted a strong flavor, but if you don’t like peanut butter as much, use less.
- 1/4 teaspoon of baking powder will help the pancakes become fluffy.
- 1/2 teaspoon of vanilla extract – This is optional, but I used it because I like how it enhances the flavor of peanut butter! If you are using chocolate protein powder, omit this ingredient.

Direction for Protein Mug Cake Recipe:
- To clean, set the mug down on a flat surface, and use a wet cloth to remove any dirt or grime.
- Add all ingredients to a mug and mix thoroughly with a spoon until no lumps are present and the batter has thickened slightly (about 1-2 minutes). Do not overmix, as this can make your cake dense and tough!
- Microwave for 2 minutes (or until cooked). After 1 minute, check if the cake is done by inserting a fork into the center of the cake; if done, the cake will come out cleanly from the sides of the mug when lifted off of the plate/bowl; if not done yet, continue microwaving for another 30 seconds at a time until finished
- Serve hot, and enjoy!

Tips:
- Make sure you use a microwave-safe mug.
- Stir the contents of your mug with the whisk. A fork will also work, but it will take longer to beat all the ingredients together.
- Poke holes in the cake using a fork before microwaving it, so it doesn’t explode while cooking. (You should also do this if there’s going to be more than one person eating from the same cup.) You can also poke holes with your fingers or even stir up some air bubbles by shaking or tapping on the top of your cup with a spoon (but don’t hit too hard!).
- Spread frosting over your cake with a knife or spoon once it’s cooked and cooled down slightly—it might still be hot when we take our first bite!
