INGREDIENTS:
- 2 medium-sized onions.
- 1 cup of green peas.
- 1/2 cup of rice (white or brown).
- 1 teaspoon of salt (or to taste).
- 2 teaspoons of olive oil (optional).
- 4 boiled eggs (optional).
- 1 teaspoon of lemon juice (optional).
DIRECTIONS of Rizi Bizi Recipe:
Step 1: Wash and drain the rice and green peas. Wash the rice thoroughly in a strainer after it has been placed in a bowl of water. Drainage is essential. Take off and throw away the onion’s outer layer of skin. Slice each onion ring into half-inch strips.
Step 2: Bring to a simmer in a skillet with olive oil. Add onions and stir fry for about 3 minutes until lightly browned. Add the green peas and simmer for 3 minutes more until vibrant green. In a skillet, add the rice and toss thoroughly to ensure that the oil coats all of the ingredients.
Step 3: Reduce heat to low, cover the skillet with a lid, and cook for about 10 minutes or until rice is cooked through without burning or sticking to the bottom of the pan. During cooking, stir the food every so often since it doesn’t cling to the bottom of the pan.
Step 4: Remove the lid and mix well with a fork until rice is well-coated with peas and onions. Season with salt to taste. Stir in lemon juice if you wish. Transfer the rice and green pea mixture to a serving dish and serve it hot with boiled eggs, if using, and lemon slices on top.
