Smothered chicken burritos are a classic recipe that is so easy to make! These delicious burritos are filled with chicken, cheese, and peppers. They’re smothered in a homemade enchilada sauce that will leave you wanting more!
This is one of my favorite quick dinners to make. It’s pretty much dump and go, but it tastes fantastic! The whole family will love these smothered chicken burritos.

What is a smothered burrito called?
If you’ve never had a smothered burrito, you may wonder what it’s called. A sMothered burrito is just like a regular Burrito except that the sauce and cheese are added after the burrito has been rolled up. The sauce can be tomato or green chile, depending on your taste.
The end result of this process is what some people call a Wet Burrito/Smothered Burrito because all the liquid in the dough and filling will make it wetter than if it was just heated in boiling water or fried without any additional liquid ingredients added to them (which is why we call them “dry” foods).

Ingredients:
Burritos:
- 3 chicken breasts, boneless and skinless.
- 1/2 of a teaspoon of ground cumin.
- A couple of teaspoons of taco seasoning.
- Sprinkle with salt and pepper to taste.
- 2 cups prepared rice.
- Pinto beans, 1 15-ounce can be drained and washed.
- 6 large flour tortillas for burritos.
- A cup of shredded pepper jack cheese.
Sauce:
- 1 cup of salsa verde.
- 2 teaspoons of dry ranch dressing or seasoning mix.
- 1/3 of a cup of cilantro, chopped.
- 1/4 cup plain yogurt.
- 1/3 cup of mayo.
- 1 tsp. of chopped garlic.
- 1 tbsp of Lime Juice, Fresh.
- 1/4 teaspoon of table salt.
- 14 teaspoons of cumin powder.
- 1 tsp. Sugar.
Instructions for Smothered Chicken Burritos Recipe:
- For burritos, sprinkle cumin, taco seasoning, and salt and pepper on chicken breasts. Put in a preheated oven and bake for 35 minutes at 375 degrees Fahrenheit. Take out the cooking utensil. Five minutes of resting time before shredding, with two forks reserved for later use.
- While the chicken is in the oven, prepare the sauce by blending all the sauce ingredients to form a uniform consistency (we used an immersion blender).
- Prepare burritos by sprinkling some shredded cooked chicken over each tortilla, with rice and pinto beans spread evenly around it (you can use canned, but homemade is always better). Wrap filling securely in your tortilla, folding in the bottom edge first, then rolling up tightly like a cinnamon roll!
- Place filled burritos into a greased 9×13 inch baking pan, then pour over prepared sauce mixture evenly over the top before sprinkling cheese over the top as well after baking 15-20 minutes (covered) until hot & cheese melted on top if using low fat/reduced sodium products then serve immediately with garnishes like chopped tomatoes/onions/cilantro leaves, etc.
